Harvesting period: the grapes are harvested a little earlier to ensure the grapes remain healthy during the drying procedure. Extreme care is taken during harvesting with the grapes being laid out in a single layer is small boxes.
Vinification: the semi-dried grapes are softly pressed and the must, which is rich in sugar and extracts, is fermented at low temperature.
Maturation and finishing: the majority of the wine in finished in stainless steel, while a smaller part is left to mature and evolve in small wooden barrels.
Alcohol developed: 16% vol.
Organoleptic description: a wine made from semi-dried grapes, presents a deep golden yellow colour with amber hues. The nose immediately identifies this as a rich, powerful wine made from semi-dried grapes; intense, rich aromas range from acacia and chestnut honey to dried apricot, raisins and figs.
Serving Temperature: 8-10°C
Matching with food: goes outstandingly well with pastries, but also with blue cheeses and foie gras.
